Why Khao Bird Is One of Soho's Most Exciting Asian Restaurants
Khao Bird in Soho offers an immersive experience of an exciting UK dining trend: the rapid rise of regional Asian cuisine. Foster and Gamko invited hospitality guests to enjoy their cooking, whilst we got a sneak peek at the operational challenges that come with it.
Led by Head Chef Luke Larson, his kitchen brings the bold, vibrant flavours of Northern Thailand, alongside influences from Burmese and Lao cooking to the heart of London.
What differentiates this urban, high-energy restaurant is the chef’s philosophy behind it. This is dining designed to be shared family-style, informal, and immersive, where each dish isn’t intended to be individually balanced, but contributes to an overall meal experience.
Its popularity is thanks to a continuing evolution of UK dining trends. Increasingly, guests are seeking out meals that offer not just flavour, but storytelling, authenticity, and connection. We enjoyed dishes like Shan-style meatballs layered with hot chilli, soft rice noodles, and wrapped in pork fat sit alongside fresh, flavour-packed plates like miang and prawns bursting with brightness.
The fiery nature took most of our guests by surprise, but it created a sense of fun and excitement during our dining experience – an energy that can only be made by great food!
How Khao Bird Delivers Big Flavours from a Compact Kitchen
While guests enjoy an effortless and relaxing experience, running the kitchen requires focus.
Restaurants like Khao Bird operate in compact urban spaces, where every square inch is valued when producing dishes that demand precision, multiple components, and careful handling of fresh ingredients. Balancing prep, service, and storage within such a tight footprint requires skill, and a well-designed kitchen utilising the right equipment.
How do you maintain consistency, quality, and creativity when your kitchen space is limited, but your menu is anything but simple?
Why Reliable Refrigeration Is Essential in Compact Restaurant Kitchens
Chef’s investing in expensive and exotic ingredients need their produce to be treated with the upmost respect. Operators working in hot, basement kitchens with delicate ingredients, bold flavours, and intricate preparation require refrigeration as a critical part of the process.
From keeping herbs crisp and proteins at peak freshness to ensuring efficient access during busy service, reliable refrigeration supports every stage of the kitchen workflow. In confined kitchens, this becomes even more important. Equipment must work harder on smaller footprints, and integrate seamlessly into the team’s rhythm.
Foster and Gamko understand these pressures. Our solutions are designed to maximise usable space, maintain precise temperature control, and support the pace of modern kitchens, helping chefs like Luke bring ambitious menus to life without compromise.
