THE WATERSIDE INN

Case study

Alain Roux
Chef Patron of The Waterside Inn

The Waterside Inn, situated in a 16th Century village located on the banks of the River Thames, has been welcoming guests to its tranquil setting since 1972. Providing an escape from the city, the three Michelin star restaurant allows customers to experience world class cuisine and seamless service provided by Alain Roux, and their master of all ceremonies Diego Masciaga.

Chef Patron, Alain Roux, has spent the past months fulfilling every chef’s dream by creating the perfect kitchen. From personally choosing every piece of equipment to overseeing the installation, Alain has ensured that the restaurant will have a kitchen capable of providing the level of quality and sophistication required by a chef with three Michelin stars.

When talking to Foster, Alain expanded on the enormity of this multi-million-pound project: “I have been giving this overhaul years of consideration, so I knew exactly what design and layout I wanted. A larger bespoke kitchen would speed up preparation and service, improving both staff and customer experiences. Central to this was the consideration of sustainability and new energy saving refrigeration which would need to meet the highest of health and safety standards. Essentially I looked for the same thing in my refrigeration equipment as I always do for my cooking ingredients: Quality.”

“Essentially I looked for the same thing in my refrigeration equipment as I always do for my cooking ingredients: Quality.”

The prestigious Eco Premier cabinet and counter range was specified due to its quality, durability and ability to maintain temperature during periods of high demand as well as their outstanding environmental credentials. The exclusive design of the Premier range perfectly befits the surroundings of the Waterside Inn. Elegant lines and innovative design combine to create refrigeration of the highest quality: Premier refrigeration for premier professionals.

Foster is proud to have held a long association with the Roux family, dating as far back as the early 1990s. Whilst many things may have changed since then, the constant specification of Foster equipment by arguably the most influential family of chefs to date represents a recommendation of the very highest order!
